This recipe is for the easiest lo mein that you can make in just 15 minutes. It’s faster, tastier, and healthier than getting takeout!

Back when I had a regular job, my boss loved the lo mein from a nearby restaurant. I used to order it for her three times a week, and she’d share some with me.

Now that I’m a full-time blogger, I often crave that lo mein. The long noodles with fresh veggies were perfect, especially with potstickers, General Tso’s chicken, and Mongolian beef. But now, let’s focus on making an easy homemade lo mein in just 15 minutes.

Easy Lo Mein Veggie Recipe

You can use ingredients you already have, and you can also add your favorite veggies and proteins.

This homemade version is a million times quicker and tastier than Chinese take-out. That’s a win!

Simple Lo Mein Recipe

Ingredients:

  • 8 ounces lo mein egg noodles
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups cremini mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 carrot, sliced
  • ½ cup snow peas
  • 3 cups baby spinach

For the Sauce:

  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons sugar
  • 1 teaspoon sesame oil
  • ½ teaspoon ground ginger
  • ½ teaspoon Sriracha

Instructions:

  1. Mix soy sauce, sugar, sesame oil, ginger, and Sriracha in a small bowl.
  2. Boil noodles according to package instructions and drain.
  3. Heat olive oil in a large skillet. Add garlic, mushrooms, bell pepper, and carrot. Cook until tender.
  4. Add snow peas and spinach, and cook until spinach wilts.
  5. Stir in noodles and soy sauce mixture, and toss gently.
  6. Serve immediately.

The key to perfect Lo Mein is getting the sauce just right, and the best part is, the noodles are easy – you can use almost any type, even pasta! Plus, you can switch up the veggies to your liking.

Lo Mein Chicken Noodles – Easy and Delicious Recipe!

Ingredients:

  • 1.5 tbsp vegetable or peanut oil
  • 2 garlic cloves, finely minced
  • 1/2 onion, finely sliced
  • 300g / 10oz chicken or other protein, sliced 0.5cm / 1/5″ thick
  • 2 medium carrots, peeled and cut into 4 x 0.75cm / 1.75 x 1/3″ batons
  • 1 large red capsicum / bell pepper, sliced
  • 6 green onions, cut into 5 cm/2” lengths
  • 500g / 1lb Lo Mein, Hokkien, or other medium thickness egg noodles, fresh, prepared per packet
  • 1/4 cup (65ml) water

Sauce:

  • 4 tsp cornflour / cornstarch
  • 2 tbsp dark soy sauce
  • 2 tbsp soy sauce or light soy sauce
  • 1 tbsp Chinese cooking wine or Mirin
  • 1 tsp white sugar (omit if using Mirin)
  • 1/2 tsp sesame oil, toasted, optional
  • 1/4 tsp white pepper (sub black)

Garnish (Optional):

  • Green onion, finely sliced

Instructions:

  1. Prepare the Sauce: Mix cornflour and dark soy until lump-free, then add remaining Sauce ingredients.
  2. Season Chicken: Transfer 2 tsp Sauce into the bowl with chicken. Toss to coat.
  3. Cooking: Heat oil in a wok or large heavy-based skillet over high heat until smoking. Add onion and garlic, stir for 30 seconds. Add chicken, stir until white on the outside, still raw inside – about 1 minute. Add carrot and capsicum/bell peppers, cook for 2 minutes or until chicken is cooked.
  4. Add Noodles: Add noodles, Sauce, and water. Use 2 wooden spoons and toss for 30 seconds.
  5. Final Touch: Add green onions, toss for another 1 minute until all the noodles are slick with sauce.
  6. Serve: Immediately, garnished with extra green onions if using.

Cooking Tips:

  • Garlic: Finely chop it, even sliced is enough. Don’t use jar paste or a garlic press.
  • Proteins: Follow the recipe for different proteins. For ground meat, add 1 tbsp sauce after cooking and proceed with the recipe.
  • Veggies: Use another 2 1/2 cups chopped veggies of your choice.
  • Noodles: Lo Mein noodles are fresh yellow noodles about 3mm / 1/8″ thick. Dried noodles or any type of noodles will work just as well.
  • Soy Sauces: Dark soy sauce adds color and flavor. Light soy sauce or ordinary all-purpose soy sauce can be used as a substitute.

  2. Heat oil in a wok, add chicken, and cook for 5-6 minutes until done.
  3. Add sliced onion and cook for 2 minutes to soften.
  4. Add garlic, carrots, red pepper, sugarsnap peas, and spring onions. Stir and cook for 1 minute.
  5. Add noodles, oyster sauce, soy sauce, kecap manis, and white pepper. Stir-fry on high heat for 3-4 minutes until warmed through.
